Sautéed baby conch with fresh local mango, rum and cilantro
Mixed baby greens with Vermont maple balsamic reduction and basil oil
Pan seared grouper with a macadamia nuts and braised bananas
Fresh berry sabayon


Six Course Sample Menu
Pan seared duck breast with cranberry and fig chutney
Roast quail with braised Belgian endive and tomato confit
Intermezzo of fresh melon sorbet
Roast rack of lamb with farro, asparagus and juniper berry jus
Flourless chocolate torte with raspberry coulis and fresh mint
Imported soft cheeses with assorted biscuits and crostini
